June 08--Here are the results of food safety inspections in Lehigh and Northampton counties for the week of May 27 to June 2.

The inspections listed here are those that fall under the jurisdiction of the Pennsylvania Department of Agriculture, as well as those county and local health departments that have elected to post results in the department's statewide inspection database.

-Hand sink in front food prep area is not functioning. facility does not have a working hand sink. Repair sink so that it is usable.

-Deli meats and cheeses are being stored without covering in the deli cold case. Wrap all deli meats and cheeses when not in use.

-Deli meats, cheeses, and prepared salads are being stored without wrappings or lids in the deli cold hold case. These products are at risk for splash due to accumulation of condensation water. Wrap and lid all stored foods before storing them.

-Deli meats in the deli cold case are being held at 45 degrees F and higher. Shelf stable items are allowed to remain in cooler. All other foods that have been out of temperature for more than 4 hours are to be discarded.

-Trays for doughnuts in rack in kitchen, a food contact surface, was observed to have food residue/mold and was not clean to sight and touch.

-Cleaned stacked pans on dish rack have old label residue and are not clean to sight and touch.

-Paper towel dispenser empty at all handwash sinks in the kitchen area. There are no available paper towels for employees.

-Several hot chocolate mix powders stored on coffee mixing counter area stored open with no covering. Also bagels are stored in open baskets on counters without protective coverings and bagels stored on trays in walk in cooler with no covering.

-Severely dented cans were observed in with the dry stock. Inspect inventory and separate any dented cans. Return these cans for credit or discard.

-Sauce is being cooled in a stock pot at room temperature for 3-4 hrs and is than being placed in the walk in to continue cooling. Rapidly cool TCS foods from 135 F to 70 F in 2 hours, then to 41 F or below in 4 hours. Sauce was discarded.

-The grinder attachment used for the grinding of cheese is being left in soiled state and is only cleaned every two days. The inside of the ice machine, a food contact surface, exhibited a build up of mold. Clean & sanitize the grinder after each use. Drain, clean,& sanitize the ice machine.

-Observed visible evidence that dried products such as rice, beans, & peanuts were contaminated by both insects and rodents. All affected product was discarded. Sort through remaining dried goods stock and discard any additional affected product. Continue working with an extermination service.

-Employee was observed donning single use gloves without prior hand wash and then touching a single use utensil. Wash hands in between changing tasks and changing gloves.

-Both hand sinks in the kitchen were blocked. The front hand sink had an empty milk container and had a water filter attached to the faucet. The back hand sink had a hose attached to it that was being used to fill in use utensil container in the hot hold.

-3 packages of raw hamburger meat were being stored above cooked foods in the walk in cooler. Keep raw animal proteins below or away from ready to eat foods.

-Cut kabocha was being stored in the vegetable cold hold at 70 degrees F and higher. Once whole vegetables have been cut, they must be held at or below 41 degrees F. Discard kabocha.

-Deli meats and cheeses are not being date marked with the date of opening or the date of discard as required. Date mark deli meats and cheeses with the date of opening. Date mark deli meats with the date of discard 6 days after the opening date. Date mark deli cheeses with the date of discard 13 days after the opening date.

-Meat residue was found on meat grinder, meat saw, and slicer. This equipment must be cleaned and sanitized after use and at most every four hours.

-Paper towels and soap were not available at the hand sink in the employee bathroom.

-The walk in to the right of the walk in freezer is dripping condensation into a bucket below exposing foods stored around it to splash. Repair unit so that dripping is contained or stops.

-Ceiling and walls in the basement walk in are peeling and chipping posing a contamination risk. Repair these areas so that they are smooth and cleanable.

-Chemicals in the 2nd floor storage room are being stored next to and above condiments. Store chemicals away and below all food or single use items.

-Front hand sink is also being used as a dump sink and used to fill buckets. Hand sinks are only for hand washing. Train employees on approved uses for sinks.

-Milks shake mixing cup is rinsed with water after use and placed with clean items for use. Wash, rinse, and sanitize all equipment and utensil used in contact with food.

-The inside of the ice machine in the basement is dirty and has some mold growth. Discard ice, wash, rinse, and sanitize the inside of the machine.

-The handwash sinks in the dish area and near the salad station were blocked by equipment and not accessible at all times for employee use. Hand wash sinks must be accessible at all times for employee use.
