Sept. 15--Here are the results of food safety inspections in Lehigh and Northampton counties for the week of September 3 to September 9.

The inspections listed here are those that fall under the jurisdiction of the Pennsylvania Department of Agriculture, as well as those county and local health departments that have elected to post results in the department's statewide inspection database.

-Raw bacon in the walk in refrigerator was poorly wrapped with most of the product exposed to air born contaminants. All food products must be sufficiently wrapped to limit exposure to contaminates.

-The walk in refrigerator exhibited a temperature of 55F. Corrective action was taken and a service company was contacted. According to the temperature log, the temp of the walk in was 38F @ 5:30AM. Was told that the employees prop the door open for extended periods of time to bring out product for service. Food was observed at temperatures of 41 or below. Continue to document temperatures in the temp log and keep door closed at all times when not in use.

-The ice machine exhibited a build up of black residue on the interior. Clean and sanitize this area.

-Cherries and hamburgers in the walk in stored open with no covering. All prepared food product must be stored with a covering to prevent contamination.

-Cheese and hot dogs were being held in the reach in refrigerator at 62 °F, rather than 41°F or below as required. Potentially hazardous food must be stored at 41F or below. Food was discarded.

-Chicken and pork were being held on a steam table w/ the temperatures of 85 and 93, respectively. All cooked product being held for service must be held at a temperature of 135F or higher. Product was transferred to a hot oven for holding as steam table temperature was adjusted.

-Hand wash sink in the kitchen and bathroom were not supplied with soap or paper towel. All hand wash sinks must be supplied with soap and paper towel.
