Kentucky Fried Chicken, 1535 Manheim Pike, Aug. 29. The person in charge does not have adequate knowledge of food safety in this food facility, as evidenced by this noncompliant inspection. The person in charge has failed in his managerial duties in controlling food safety in this food facility. A Food Employee Certification is displayed, but the individual is no longer employed by the food establishment. Ice scoop at the drive-thru being stored in a bin of dirty water. Torn rubber door gaskets on the small cooling unit beneath the cooked chicken. Black residue up inside the ice maker at the customer self-service soda machine. A tan residue buildup inside the self-service soda machine nozzles in the front service area and at the drive-thru. Tan slime on the deflector plate of the ice maker. These utensils and equipment were greasy and not clean to sight and touch and were stored clean: cookie sheets, scoops, trays and tongs. Old food splatter hanging from beneath the pass-through above the hot-holding table. Slime and old food residue on the metal carts used to hold the boxes of chicken in the walk-in cooler. Old food residue and slime around the base of the hand-wash sink in the back. Old grease and food residue on the tray used for storing clean utensils. Pink slime down the entire inner jamb of the walk-in cooler door. The faucet at the front hand-wash sink does not stay upright and turns upside down when attempting to wash hands. The dumpster corral is full of dead leaves, debris and bags of trash, creating a potential for rodent harborage. The dumpster lids are broken and do not close tight. There were bags of trash thrown on top of the dumpster. Cracked floor tiles in the walk-in freezer. Loose floor tiles with old food residue and dirty water near the floor drain in the back. The coving is missing from the wall at the base opening of the walk-in cooler. The entire floor in the back is extremely greasy and wet. Part of the wall in the walk-in cooler is eroding and is no longer smooth and easily cleanable. The wall tiles under the dry storage rack are broken and missing. Paper towel dispenser is empty at the hand-wash sink in the back. Several small, flying insects in the back area near the mop sink and near the cookies.

Keystone Service Systems Inc. , 230 S. Queen St., Aug. 29. The Food Employee Certification has expired. The facility has 90 days to replace or renew the department certification; repeat violation.

Commercially processed, refrigerated, ready-to-eat, time/temperature-control-for-safety food, located in the walk-in cooler and held more than 24 hours, is not being marked with the date it was opened. Refrigerated ready-to-eat, time/temperature-control-for-safety food prepared in the food facility and held for more than 24 hours, located in the walk-in cooler, is not being date marked. The person in charge does not have adequate knowledge of food safety in this food facility, as evidenced by this noncompliant inspection; repeat violation of 2016. An aerosol can of stainless steel cleaner stored among clean food equipment in the dish-washing area. Cigarettes found on the shelf with food in the back during the inspection. Food employees preparing food at the cook line and in back preparing soups while not wearing beard covers; repeat violation of 2016. Crab dip in the Traulsen reach-in cooler is spoiled and moldy and adulterated. Ham slices in the small cooling unit stored open with no covering beneath a fan covered in mildew. Roast beef, turkey, tomatoes, salsa, pancake mix, eggs, buffalo chicken dip and crab dip were held at 50-72 F, in the front cooling unit at the cook line and in the Traulsen reach-in cooler, rather than 41 F or below as required; repeat violation of 2016. Time in lieu of temperature being used in the food facility to control ready-to-eat potentially hazardous foods without written procedures or documentation to verify disposition of food; repeat violation of 2016. The shelves in the cooling unit across from the cook line are wrapped in plastic, which is not smooth and easily cleanable. Temperature-measuring device for ensuring proper temperature of equipment is not available or readily accessible in the Traulsen reach-in cooler. The ambient temperature of the Traulsen reach-in cooling unit is 60 F. This unit shall not be used for storing time/temperature-control-for-safety foods until it is repaired and holding proper cold-holding temperatures. Black mold on the inner-back wall of the ice maker. Old, hardened food residue on the inner rim of the ham slicer; repeat violation of 2016. Mold on some of the shelves of the walk-in cooler. Mildew on the fan of the small cooling unit. Clean aprons stored in the employee restroom. Dumpster lid left open at the time of this inspection.

Wooden pizza paddles are chipped and have jagged edges and need to be corrected so that they are smooth; repeat violation. Spaces between hood baffles. Residue on ice machine deflector plate. An employee’s open beverage container (screw-cap variety) was in sandwich and pizza-making area. Food employees eating in the back food prep area, as evidenced by partially consumed food. Food employees preparing pizza while not wearing proper hair restraints, such as nets or hats. Raw shrimp stored above pasta in the reach-in cooler. Food utensils stored in a container of water that is not maintained at 135 F. Scoop being stored in the ice machine with handle buried beneath the ice bin and the ice maker. Wet wiping cloths on the food prep tables are not being stored in sanitizer solution. A regular paint brush with erosion on the metal part is being used to grease pizza pans, rather than a food-grade brush. Packing tape being used to hold together the bain-marie lid. The temperature of quat ammonia sanitizer being dispensed at the three-bay sink in bakery measured 145 F rather than 75 F, as stated on test strip container label. There is a half-inch gap under door in seafood department that needs to be sealed to prevent vector entrance. In meat department, paper towels, a hand-washing aid, located at a sink that is not used for hand-washing. In bakery, floor drain is clogged, causing water to pool in walk-in cooler. An accumulation of food debris under shelves in kitchen.

Wawa No. 8025, 787 Route 41, Gap, Aug. 24. Three pints of half-and-half offered for sale with expired “sell-by date”; discarded. Insulation torn on walk-in cooler condensate line, and water dripping into a case of cheese; item discarded. Equipment not in good repair - insulation missing on walk-in cooler condensate line and water dripping on food items. Static dust accumulation on walk-in cooler condensing unit fan covers.
