-The refrigerator that is in use in the kitchen was not able to hold food at 41 degrees. The food was removed and placed into another unit. the refrigerator is to be taken out of service and not used until repaired and able to hold temperature. If the unit can not hold temperature, the unit is to be replaced. Food will be required to be disposed of if this is in occurrence.

-The refrigerator in the kitchen cannot hold temperature as required. Repair or replace.

-The following areas are to be cleaned of dust and food residue: Food storage bins in back room, can opener, floor under cooking bank, soda machine vents, fan in kitchen. Clean all items.

-Observed that the shelves in the refrigerated units are in need of both cleaning and refinishing /sealing to keep stored food safe.

-Ceiling tiles are missing in the kitchen area. Replace all ceiling tiles that are missing.

-The green peppers that were being offered for sale in the produce section of the store were damaged and distressed. The owner removed them from the unit and disposed of them .

-The three bay sink was not being used as it was designed to be used. The PIC/FEC employee is to fully instruct both employees in the proper use of the sink.

-The fan guards that covered the fans in the walk in cooler had an accumulation of dust and dirt built up on the units. Clean the fan guards so that no dirt can blow onto food in the walk in.

-Observed a food service employee taking a dirty bowl and washing it under water and then rinsing it off. The three bay sink was not set up for wash/ rinse/sanitize procedures as it was designed for. One bay of the sink had a cutting board over the top of the sink bowl. Proper sanitization was not followed by the employee.

-The toilet room that was used for employees had no paper towels present for employees to wipe their hands. A roll of paper towels was placed into holder before the end of the inspection.

-The hand washing sink that is located in the food prep location had dirty items stored in the sink. These items were removed and additional items were then placed into the sink. The hand washing sink is to be kept clear of all items at all times. Nothing is to be placed into the hand washing sink.

-Food facility inspection indicates evidence of insect activity along the walls and floor junction areas, facility has a current monthly pest control program. During this inspection assisted owner in creating a weekly pest control program.

-Food facility is using / offering for sale foods prepared in an unapproved private home. Meatloaf prepared in the cook's home was going to be offered for sale. All food served to the public must be prepared in this licensed facility. Do not serve the meatloaf to the public.

-Food was held at 44°F, in the large refrigerated prep unit, rather than 41°F or below as required. Food was moved to the walk-in cooler and other refrigerators.

-The large refrigerated food prep unit is not capable of maintaining food at the required temperature of 41F or below. Repair this unit so that it functions correctly and do not store any food in this unit until after it has been repaired.

-The cooking equipment and the table supporting the equipment, requires cleaning to remove accumulated grease and food debris. Clean all equipment to remove the grease.

-The freezer requires cleaning to remove food debris and spilled product. Clean this freezer.

-The label, on the exhaust hood over the cooking line, indicates that the system has not been cleaned or serviced professionally since May of 2016. Contact your service company and have them service the system and then have it serviced every six months as required by law.
